Mid-Autumn Festival or Tết Trung Thu is an ancient festival considered “children’s day” in Vietnamese culture. It’s day to celebrate the harvest, spend quality time with your kids – spoiling them with toys, their favorite foods, paper lanterns & treats such as mooncakes. I made Snow Skin Mooncakes the other day and wanted to make another batch of mooncakes today, but I didn’t have a lot of time so I came up with this quick and easy recipe on the fly and had all the ingredients on hand – only 4 ingredients needed and no baking or cooking involved. This version is obviously very untraditional, but they look beautiful and taste delicious – the flavor is very reminiscent of the cake coating on Good Humor Strawberry Shortcake Ice Cream Bars. Ingredients

  • 20 oz Box of Trader Joe's Vanilla Joe-Joe’s or Family Size Golden Oreos
  • 7 oz Cream Cheese
  • 1.2 oz Trader Joe's Freeze Dried Strawberries
  • 50g Mooncake Molds

Method

  • 1)

    Add Freeze Dried Strawberries to a food processor, process until the strawberries become a powder. Sift the mixture into a bowl and discard the larger crumbs.

    Add the full box of Joe-Joe’s into the food processor and process until they become fine crumbs. Cut ¾ Cup / 6oz of Cream Cheese into cubes and add to the food processor, process until it starts to look like dough and the cream cheese is evenly distributed.

  • 3)

    Get 2 Tablespoons of the dough (40g) and roll firmly into a ball and place on a baking sheet lined with parchment or silicone mat. Continue forming balls with the rest of the dough.

  • 4)

    Coat a dough ball very well in the Freeze Dried Strawberries Powder, place into the mooncake mold, hold the mold firmly on your work surface, then press the mold down very firmly 3 times then lift up the mold and remove the mooncake. Repeat until you’ve made all the mooncakes – don’t worry if they look powdery when first come out the mold, it gets absorbed once they sit in the fridge for about an hour. You can store them in a sealed container in the refrigerator for up to a week, let them sit out for about 10 minutes before serving them. Enjoy!
